Arabic Coffee
The serving of traditional coffee (kahwa) is an important social ritual in the Middle East. Local coffee is mild with a distinctive taste of cardamom and saffron, and it is served black without sugar. It is served with dates, to sweeten the palate between sips. It is considered polite to drink about three cups of the coffee (it is served in tiny cups, about the size of an egg cup).
INGREDIENTS:
5 pods cardamom
1 3/4 cups water
2 teaspoons (rounded) Coffee
DIRECTIONS:
This is a quick, modern method for preparing ceremonial coffee. It should be served in a small ornate pot and poured into the tiny bowl-shaped cups as the hostess stands in front of each guest. As no sediment remains in the bottom of the cup.
1. Gently boil the cardamom in the water for ten minutes. (Some of the water will evaporate.)
2. Add the Coffee and boil for 1 minute.
3. Serve in very tiny cups.
